Description In my family, we fry chicken in cut pieces with a basic marinade of calamansi juice and salt. The only recipe that calls for a whole chicken that I could recall during my childhood was "Pinaupong Manok". The bird literally sits on a bed of rock salt inside a large pot. I am planning to try and revive this cooking process someday though. For the meantime, I will be sharing with all of you, a recipe and technic of cooking a whole fried chicken,which I learned from a friend years back and had become a favorite in gatherings or just whenever we crave for a fried chicken that has crispy skin with moist, juicy and tender meat.
